St. Kitts cooks simply and generously, and the national dishes are the ones to chase first. This is island food built on the sea, the garden and slow pots, and the best of it is often a lunchtime plate rather than a dinner out.

What to order

Goat water is the one to know: a dark, peppery goat stew, thickened and spiced, closer to a gravy than a soup, eaten with a hunk of bread. Saltfish, usually with breadfruit or dumplings, is the everyday plate, and cook-up is the one-pot of rice, peas and whatever meat is to hand. Ask for the local plate and you will usually get some combination of all three with provisions on the side.
